Many of us have been in the same shoes: choosing healthier meals for a period of time, only to end up indulging in delicious treats as a reward for doing so. (I mean a person can only turn down their favorites for so long before they just HAVE to get their hands on the good stuff, right?) But that’s where “dieting” can take a disastrous turn.
What was meant to be a positive change can turn into a vicious cycle of restrictions, cravings, resentment, and more restrictions if people aren’t careful.
When we first discovered keto ice cream in the store, we were incredulous:
There’s no way everyone’s favorite childhood dessert can be good for the keto diet!
Boy, were we wrong.
The best part about keto-friendly ice cream – besides the fact that it’s low carb and high in good fats – is that it’s actually fairly simple to make.
So before you go rushing out to buy those expensive cartons (that are way too tiny for any normal-sized human, in our opinion), check out our version below, which we’ve been told tastes better and has a creamier consistency than the stuff on the shelves.
Not to mention the fact that we infuse one secret ingredient to add nutritional value not found in ANY other ice cream on earth.
If you told us when we were kids that we’d be putting bone broth in our desserts – and LOVING IT – we would have said
“Ew”….and also “What the heck is bone broth??”
Fast forward to today, and – not only are we drinking and cooking with our favorite liquid gold every single day, but we also found a way to add it to everyone’s favorite after-dinner delight to ramp up the nutritional benefits!
Finally, a way to get collagen and satisfy cravings all in the same bowl.
Look, we know it sounds weird at first – after all, we’re the only ones we know that have successfully done it! But our entire company can vouch for the recipe below, as it was developed and sampled during our Bone Broth Cook-Off one year.
The team who created the recipe won the competition; the team who didn’t, called it cheating:
“There’s no way this is made with bone broth, we demand a rematch!”
Experiment at home with the easy recipe below and see why collagen-rich, low-carb, keto-friendly ice cream is the best dessert you’ve never had.
In a medium saucepan, combine the cream, ½ cup honey, vanilla extract, ginger, and bone broth.
Bring to a boil, turn off the heat, and let sit for 1 hour.
In a small bowl, beat the eggs to a homogeneous consistency.
Bring the cream-ginger mixture back to a boil and turn the heat off. Immediately strain and whisk a third of the cream mixture into the egg and then immediately whisk the egg mixture back into the remaining cream mixture.
Place the custard into an ice cream machine*, churning until frozen. (*No ice cream machine? No problem! Here’s another method you can try: How to Make Ice Cream Without a Machine)
Remove frozen ice cream from machine and store in the freezer**.
